CRISPY PANEER SALSA WRAP
My last recipe was Red Velvet Cup Cakes, which is still loved in the younger generation. When I served it as a desert on my dining table, everyone was glowing in excitement other than my dad. He being ‘not-so-much’ of a sweet-tooth was glad that I tried my hands on something that was loved by the entire family. But I didn’t like the hidden disappointment on his face.
That too when Fathers’ Day is a recent topic; So I decided that this time I am going to make something that I can dedicate to my father’s taste buds. After all, they don’t call me the “daddy’s little princess” out of nothing. J
So here’s my special recipe for my Daddy Dearest – Crispy Paneer Salsa Wrap
Recipe-
Ingredients for totillas
400gms plain flour
1 tbsp butter
1tsp baking powder
Pinch of salt
170ml boiling water
Method
Mix together the flour, baking powder and salt in large bowl. Rub in butter. Add water slowly, mixing with your hands to make a soft dough. You may not need all the water.
Knead a few minutes on floured surface until smooth and elastic. Lubricate top with oil, put back in bowl and let rest, covered for 10 minutes.
Divide into small size pedas and proceed to roll out into size and thickness you prefer.
Cook in dry heavy frying pan until top is slightly bubbly then turning on opposite side for a minute or two. Keep stacked and warm.
Spicy salsa sauce-
3 red whole chillies soaked in little water for ½ hr.
3 tomato roasted, peeled
2tsp Ginger garlic chopped finely
¾ cup tomato puree(I used market bought)
Salt, white pepper , black pepper to taste.
2tbsp tomato ketchup
1tsp soya sauce
1tsp vinegar
1tbsp sugar (or as per taste)
1/3 cup chopped fresh coriander.
(You can change the quantity of spices as per your taste)
Method
For sauce-
Heat oil in a pan, add ginger and garlic and saute till golden brown. Add tomato puree, roasted tomato (grind roasted tomato and red chilies together). Cook for 5 to 7 minutes. Add rest of the ingredients and cook for another 1 minute. Your spicy salsa sauce is ready.
For paneer-
Ingredients– 250 gms paneer (cut into small cubes)
1tbsp cornflour
Salt, black pepper and chat masala – to taste
Method- Mix cornflour ,salt , pepper and chat masala and marinate paneer for 10-15 minutess. And shallow fry in oil till slightly crisp (do not deep fry.)
Other Ingredients for stuffing:-
2 onion (sliced)
1capsicum (cut into thin fingers)
1-2 spring onion (chopped)
Cabbage (cut into thin fingers)
(Keep few veggies raw for the wrap).
Method – stuffing
Heat oil in a pan. Add onion and saute till light brown.
Add capsicum, salt and black pepper. Saute just for 1-2 minutes. Veggies should be crisp. Add cabbage and fried paneer into it. Now add spicy salsa sauce to it (just to coat paneer and veggies) and toss for 1 min. Keep it aside.
How to ready the wrap-
Heat butter on tawa and slightly crisp the tortilla wrap from both sides .
Now take tortilla wrap and spread mayonnaise (optional), tomato ketchup and little mustard sauce.
Place the paneer stuffing , few raw onion , cabbage and capsicum and roll the wrap.
Serve hot
